Alabama Sweet Potatoes

Phil’s Alabama relations, uncle James and aunt Mary Jo, stopped by for a visit this week and left behind a whole box of Cullman County sweet potatoes. (I love that we both have roots in Alabama. We really want to get down there some time y’all!)

We’ve fried ’em, baked ’em and now I’m on the hunt for more ways to enjoy ’em. Let me know if you’ve got a favorite sweet potato recipe!

    We like cooking them up and putting them on quesadillas. It doesn’t use a lot of sweet potato though. My recipe calls for one boiled sweet potato, mashed up with one can of black beans. Spread over 3 tortillas. Top with shredded chicken, cheese, and the 3 tortillas to complete the quesadillas. It adds a yummy sweetness and makes a unique flavor.

    I love sweet potatoes, but my favorite way is grilled (cut up in chunks) with olive oil, salt, pepper, and lots of lemon juice. Is it too cold to grill there??? You could also roast, puree, and freeze them in ice cube trays for Gerhardt when he’s on to solids. Enjoy!

    Mmmm, these sound great! Thanks you guys! And no Rachel it’s not ever too cold. We’ve been known to bust out the grill when it’s in the 20s otherwise we’d only get 4 months out of the year to use the thing!

    Sweet Potato Cornbread
    1 package Martha White Sweet Yellow Cornbread Mix
    1 t. cinnamon
    1/2 c. milk
    1 c. mashed sweet potato(cooked in microwave)
    1/4 c. brown sugar
    1/4 c melted butter
    1 large egg
    1 pinch nutmeg
    Mix all in order. Pour into greased cast iron skillet. Bake 425 degrees
    20-25 minutes or until light brown. (yummy)
