Monte Cristo, the Sandwich Not the Count

I made Monte Cristo sandwiches last night. I’d never had one though I remember them being very popular at Bennigan’s. I couldn’t imagine eating one before last night. There just seemed to be something wrong with a fried sandwich served with powdered sugar and preserves. But what was I thinking? These are amazing! Maybe it’s because I’m growing a baby right now, but these really hit the spot!

I deviated from the “traditional” recipe using cheddar and mozzarella (the only cheeses I had) and cooked them butter instead of oil, more like french toast instead of deep frying them and I wasn’t disappointed.

Whoever said making spatzle [SHPEHT-sluh; SHPEHT-sehl; SHPEHT-slee] is quick and easy fibbed! I tried making it the other night, and I’ll say it turned out tasting better than I thought it would, but quick and easy it was not. Plus it kind of looked liked white cheetos…

I just can’t wait to have the real deal in Deutschland!

PS I didn’t eat all those meatballs.

I’ve never eaten Red Velvet Cake and I’ve certainly never made one. I’ve only associated them bleeding armadillo cakes from the movie Steel Magnolias…
I just never thought about using Red Velvet mix before so when Christi left some here for me I thought I’d go ahead and make something with it.
I had no idea what I was in for. It all started so innocently. It looked different but not alarming…YET!

Warning, this is NOT a cake mix for the faint of heart.

What have I done??!!


Oh come on!

This was just too much!

Even Lily was curious or a little frightened perhaps.

I just thought I’d share this survival story. I have to say the cake was pretty tasty, especially with homemade chocolate frosting. Red Velvet Cake…perfect for hmmm, Halloween and bleeding armadillo cakes.

We eat a lot of tacos around our house (well, at our kitchen table, not in different rooms). I’m fed up with buying a box of taco shells and opening them to find EVERY ONE of them broken. So I decided to start making my own shells at home. I don’t know if they’re healthier but they sure are delicious and NOT broken.

I’m still trying to figure out how to get that nice taco shell shape. Sorry for the blurry picture. This is the second time I’ve made them. I am getting better at it believe it or not!
